The weight is perfect for getting an even sear without pressing all the juice out, and it's cut down my cook time on pork chops noticeably. Just set it on and let the cast iron work, the crust comes out exactly how I like it.
The cast iron weight sits perfectly flat and really holds the heat—my chicken thighs came out with that deep, crusty sear I usually only get at a restaurant. It's heavy enough that you feel it working, yet easy enough to flip with one hand once you get the hang of it.
Took this out for smash burgers and thick-cut pork chops over the weekend. The heft of the cast iron really presses down evenly without any wobble, and the sear it left was deep and golden. My only regret is not grabbing a second one for when the grill is full.
